pesto

If there is one food that I could say is Kekoa's favorite, that would be pesto.  He just loves the stuff.  I always have some on hand, the store bought kind from Trader Joe's.  While it is very delicious and easy, I have been wanting to make pesto since before Kekoa was even born.  I always have some excuse and the fact that the TJ pesto is so easy doesn't help.

Today was the day.  One of Scott's Christmas presents was the "Ninja" blender...if you don't know what this is, let me just say it is awesome.  I have been using it every day (hmmmm, was it really a present for Scott?), pureeing Malia's baby food, making smoothies, and today, making spinach pesto.  Of course the recipe came from weelicious.com.  I threw in a handful of basil, omitted the salt, and added an extra garlic clove.  How did it turn out??  D.E.L.I.C.I.O.U.S.    I was a little worried since Kekoa has become so picky now that he wouldn't like it.  He was watching me make it, thoroughly enjoying seeing everything whirl together.  We both tasted it and it passed his approval.  We mixed the pesto with whole wheat penne and rotisserie chicken....such an easy meal and so yummy.  Kekoa ate a whole bowl and both the chicken legs and thighs of the rotisserie chicken.  Finally, a dinner that was a home run.  Most dinners these days are big strike outs, so I was so happy to have a winner...and can't believe how easy pesto really is to make!
